INGREDIENTS Sweet Potato Chips - 1 large sweet potato (yam) - 1 tbsp olive oil - 1/4 tsp ground tumeric - 1/4 tsp ground ginger - 1/4 tsp ground cumin - fresh cracked black pepper - pinch of kosher salt Cool Orange Dip - 1/2 cup plain Greek yogurt - 2 tbsp mayonnaise - 1 tbsp honey - 1 tbsp orange juice - orange zest - chopped parsley DIRECTIONS 1. Preheat the oven to 350F 2. Thinly slice sweet potato into even thickness slices with a knife or mandolin (I used the 3mm/ 1/8" on the mandolin) 3. In a bowl place sweet potato slices and olive oil and toss until evenly coated 4. Add spices, salt and pepper and toss 5. Spread slices on a large baking sheet and bake in the oven for 15 minutes, pull out of the oven and flip, put back in the oven for 5-10 more minutes. Take all of the chips that are fully cooked and put them in a serving bowl. Put uncooked sweet potato chips back into the oven for 5 more minutes and check again. Smaller sized chips will cook faster than larger ones 6. In a bowl mix all of the dip ingredients and stir until blended 7. Serve chips with dip on the side and enjoy!
